This oriental pasta salad is always a huge hit! Several people have asked me for the recipe over the years. It’s simple to make and serves 8-10 people. It’s the perfect balance of spice and sweet sesame. Seriously so yummy!
*I made this for my Halloween playdate a few weeks ago and was asked for the recipe again. My family and I went gluten free in January and this was the first time I used a gluten free pasta. The texture came out different this time, a little too al dente. So if you are using gluten free pasta, be sure to cook your pasta a little over al dente.
Spicy Sesame Oriental Pasta Salad
- 1 pound pasta (any shape) ½ cup chopped cilantro
- 2 tsp. crushed dry red pepper ¾ cups chopped unsalted peanuts
- ¼ cup peanut or corn oil ½ cup chopped green onions
- ½ cup sesame oil 2 T sesame seeds
- 6 T honey 2-3 chicken breasts cooked & shredded
- 5 T soy sauce Salt to taste (optional)
- * Cilantro leaves and shredded carrot for garnish
Cook pasta to al dente and drain well.
While pasta is cooking, use a saucepan and stir red pepper and oils over medium heat for 2 minutes. Add honey and soy sauce, stir to combine and mix well with cooked pasta. Cover and refrigerate for at least 4 hours or overnight.
When ready to serve, add chopped cilantro, peanuts, green onions and chicken. (Season with salt if needed.) Toss together and place in serving bowl. Sprinkle with sesame seeds, shredded carrots and cilantro leaves for garnish.
*Note: Add the cilantro, green onions and chicken to the salad in the morning after the pasta has set overnight. This way the flavors start to blend. Then stir in the peanuts right before serving and sprinkle the sesame seeds cilantro and carrots on top for garnish.
