Since we are in the midst of pumpkin (everything) season…Here is my recipe for EASY Pumpkin Spice Muffins! I am asked to make these muffins by my family and friends every time fall rolls around. They are great to serve at brunch or to bring to the next Sunday football gathering! It only takes a few ingredients and less than 5 minutes to prep. They come out moist and delicious every time! If you are a lover of all things pumpkin, these muffins are a must try!
- 1 Box Spice Cake Mix
- 1 (15oz) Can Pumpkin Puree (Do not use pumpkin pie mix!)
- 2 Eggs
- 1/4 Cup Water
- 1/2 Teaspoon Cinnamon
- Optional: Chocolate Chips, Butterscotch Chips
Preheat oven to 350.
In a large bowl, mix together eggs and water. Add pumpkin puree and mix. Add cinnamon and spice cake mix, stir well. Blend in chocolate and butterscotch chips. Pour batter into lined muffin cups about 2/3 full.
Bake for 15-20 minutes, until a toothpick inserted into the center comes out clean. Cool for 10 minutes in tins before removing to cool on a wire cooling wrack.
Best served warmed! Enjoy!
