I love making breakfast for my family on the weekends, and my girls love to help! One of our favorite things to make, pancakes. Ever since going gluten and dairy free, I have been trying to come up with a good pancake recipe. Guess what guys, I finally did it! These gluten free chocolate chip pancakes are fluffy, moist and delicious. Gluten eaters would never know that these bad boys are gluten free! What you need:
3/4 Cup Gluten Free All Purpose Flour (My favorite brands are Bob’s Red Mill and Pamela’s.)
1/2 Tsp. Xanthan Gum
1 1/2 Tsp. Baking Powder
1 Tsp. Sugar
3/4 Cup Milk (I use Cashew milk but any milk will work.)
2 TBL. Cooking Oil (I use coconut cooking oil but any cooking oil will work.)
1/2 Tsp. Vanilla
1/2 Cup Mini Chocolate Chips
1/2 Tsp. Cinnamon (Optional)
What to do:
Combine all dry ingredients into a large mixing bowl.
In a separate bowl, add milk, cooking oil, vanilla, and eggs. Whisk until well blended.
Combine milk mixture into dry ingredients, and whisk until combined. Let stand for 5 minutes.
Preheat nonstick griddle to medium high heat.
Add chocolate chips and mix together.
Using a 1/4 measuring cup, pour batter onto hot griddle. Cook until edges are no longer shiny and bubbles have formed at the surface. Flip pancake and cook opposite side. To check if they are done, lift edge of pancake with spatula and take a look.
