I’m going to call these my “Get Along Cookies”. A few weeks ago I was having a really tough day with the girls. They were fighting nonstop and none of my tactics to get them to stop fighting were working. Then a light bulb went off, I need to do something to bring them together! What better way to do that than one of our favorite activities, baking. So I searched through the cupboards to see what we had on hand. There was gluten free cake mix, chocolate and butterscotch chips, and in the fridge we had butter and eggs. Alright, cake mix cookies it is! I told the girls to wash their hands because we were going to bake. Almost instantly, the fighting turned to giggling. They worked together and had a blast! The rest of the day they got along great! Win for Mom!
These Chocolate Butterscotch Gluten Free Cake Mix Cookies are so easy to make and so delicious! If you’re not gluten free, you can substitute for regular cake mix.
What you need:
- 1 (16 ounce) Box Gluten Free Vanilla or Yellow Cake Mix
- 2 Eggs
- 6 TBL Unsalted Butter, at room temperature.
- 2 Bags Chocolate Chips
- 2 Bags Butterscotch Chips
What to do:
Preheat oven to 325 degrees. Pour cake mix in large mixing bowl. Add butter and mix.
Add eggs and mix well.
Batter will be smooth and thick.
Add the chocolate and butterscotch chips and mix. You can add as much or as little as you’d like. For my family the more, the better!
Lightly spray baking sheet with nonstick cooking spray. Using a Tablespoon, scoop mix and place on cookie sheet. These cookies spread out a lot so be sure you have enough room in-between each cookie. Bake until lightly browned on edges, about 10 minutes.
Let cool on baking sheet for 2 minutes prior to moving to cooling racks. Cool completely.
Melt 1/2 of a bag of chocolate chips and 1/2 of a bag of butterscotch chips.
Drizzle chocolate butterscotch over cookies and let dry.
